Blueberry Muffins with Oats
Blueberry Muffins with Oats (Makes 6-12 servings)
Ingredients
1 1/2 cups flour
1 cup rolled oats
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 cup skim milk
1 egg
1 teaspoon vanilla
3 tablespoons applesauce
1 1/2 cups blueberries, rinsed and dried, or frozen berries
Directions
Preheat oven to 350°F.
In a large bowl, combine the flour oats, sugar, baking powder, salt, and nutmeg.
In a separate bowl, mix the milk, egg, vanilla, and applesauce.
Combine the wet ingredients with the dry ingredients and mix thoroughly. Gently fold in the blueberries.
Fill greased muffin cups about 3/4 full with the batter. Bake for 15-20 minutes, until a knife inserted in the center comes out clean.
