Lighter Sloppy Joes (Makes 6 servings)

Ingredients  

  • 1 tablespoon olive oil  

  • 1 cup chopped onion  

  • 8 ounces lean ground beef or turkey  

  • 1 tablespoon chili powder  

  • 1 tablespoon brown sugar 

  • 1/2 teaspoon salt  

  • 1 (8-ounce) can tomato sauce  

  • 1/4 cup water  

  • 6 hamburger buns, toasted  

  • 1 (15.5-ounce) can chickpeas drained 

Directions 

  1. In a large skillet over medium-high heat sauté onion in oil for about 4 minutes until almost tender.  

  1. Add meat; cook for 5 minutes or until browned, stirring to crumble. Stir in chili powder, sugar, and salt; cook for 1 minute, stirring constantly.  

  1. Add 1/4 cup water and tomato sauce; reduce heat, and simmer 2 minutes or until thickened. 

  1. Place chickpeas in a bowl; partially mash with a fork. Stir chickpeas into meat mixture and heat through, about 1-2 minutes. 

  1. Spoon about 1/2 cup sirloin mixture onto each bun. Top with pickles, sliced tomato or onion as desired.
