Lighter Sloppy Joes
Lighter Sloppy Joes (Makes 6 servings)
Ingredients
1 tablespoon olive oil
1 cup chopped onion
8 ounces lean ground beef or turkey
1 tablespoon chili powder
1 tablespoon brown sugar
1/2 teaspoon salt
1 (8-ounce) can tomato sauce
1/4 cup water
6 hamburger buns, toasted
1 (15.5-ounce) can chickpeas drained
Directions
In a large skillet over medium-high heat sauté onion in oil for about 4 minutes until almost tender.
Add meat; cook for 5 minutes or until browned, stirring to crumble. Stir in chili powder, sugar, and salt; cook for 1 minute, stirring constantly.
Add 1/4 cup water and tomato sauce; reduce heat, and simmer 2 minutes or until thickened.
Place chickpeas in a bowl; partially mash with a fork. Stir chickpeas into meat mixture and heat through, about 1-2 minutes.
Spoon about 1/2 cup sirloin mixture onto each bun. Top with pickles, sliced tomato or onion as desired.
