Quick Bruschetta (Makes 8 servings)

Ingredients  

  • 1 loaf French bread  

  • 8 Roma tomatoes, diced  

  • 1/3 cup chopped fresh basil  

  • 2 cloves garlic, minced  

  • 1/4 cup shredded Parmesan cheese 

  • 1 tablespoon balsamic vinegar  

  • 1 teaspoon olive oil  

  • Salt and pepper to taste 

Directions 

  1. Preheat oven (or toaster oven) to 375°.  

  1. Cut bread into 1/3-inch-thick slices. Arrange in a single layer on baking sheets and bake 8 to 10 minutes or until golden brown, turning once.  

  1. In a bowl, toss together the tomatoes, basil, Parmesan cheese, and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper.  

  1. Serve on toasted bread slices.
